I would be very grateful if someone would be able to transcribe a couple unrelated entries in the parish registers for me into more readable Norwegian.

they are the first entry (No. 4) in a Vats, Rogaland register from 1837: Permanent imagelink:

Your link to Vats does not have an entry #4 on that page.

The link to the 'leaving the parish' section of the Hovin church book lists a family of four leaving with intended destination of 'Nord America' --
Ole Olsen, Kari Steensdtr??, Ole Olsen, and Sigrid Olsdtr. The family appears to list a farm name something like Bakka or Bakken. (The 1801 Norwegian census shows a Bakken in Hovin -- then within Gransherad -- and possibly the parents of Ole Olsen, in-laws to Kari and the grandparents of the two emigrating children.)

The column headings for the "Afgangs-Lister Afgaaede fra Sognet Formedelst Bortreise" appear to be a a slightly older format that I would have expected to be used in 1841-1843.

Their farm was indeed Bakka; what are their occupations listed as Ole's might say "gaurdsman" and in the last column it says 6 Mai 1842 (I assume their departure date), but what is the accompanying text?

As for the Vats Parish entry, I sent the wrong page it is the first entry on this page #4 "Ole":
