English (North Midlands): possibly a habitational name from the placename Cowbit in Lincolnshire meaning ‘river-bend frequented by cows’ named with Old English ‘cow’ + byht ‘bend curve’ referring to a bend in the River Welland. The surname may also be a variant of Cubit . Whatever its origin it seems to have been understood as a placename including Middle English pit ‘pit’. It has also sometimes been influenced since the Renaissance by the name of the Roman god of love Cupid.
