New Hampshire Quakers

I'm researching my Purington Quakers in Hampton and Epping, New Hampshire and Salisbury and Amesbury, Massachusetts. I know they converted because this is my 5th great grandfather, Joshua Purington and his grandfather owned a tavern and was often drunk in public and his father is known as Lieutenant John Pur(r)ington to diferentiate him from a cousin. It turns out that many of Joshua's generation were Quakers, I have the meeting minutes from the FHL and I'm just starting to wade through them. My questions are 1.) how did a conversion work, 2.) if someone wanted to marry a non-Quaker person, could that person convert and they could then marry and 3.) why don't I find New Hampshire meetings in a search of Hinshaw's encyclopedia. I'm new at researching quakers so any help would be appreciated!
