See if I have some of this right.
1766 birth record for Maria Jorgensdatter.

father: Jorgen Olsen farm-Bye.
godparents: Maria ?Jolesdatter Bye, Christopher Moesen?, Anne Mads Andersen Bye, Peder Nielsen Hurium, Ole Nielsen Bierohe.

I used a few online aids and could the date be 26 Jan 1766?

Also is the mother listed anywhere?

I interpret it like this: Godparents: Maria Johansdatter Bye, Christopher Moes D: Anne (= Christopher Moe's daughter Anne = Anne Christophersdatter Moe), Mads Andersøn Bye, Peder Nielssøn Hurum, Ole Nielssøn Bierche (= Bjerke)

She was christened Dom Septuag: (26 January 1766), and her mother was "introduced" the next sunday
Unfortunately, it just says Jørgen Bye's Kone (wife), not mentioning her name.

The daughter (D) threw me, thanks for clearing that up and giving a better translation of names and farms.

I nailed the date!!! It took quite a few websites, first to find the word Septuagesima, then Shrovetide Sunday, and then the 1766 dates for those events and finally the calendar on my phone to get to it. Is there an easier way/place to figure out these ecclesiastical dates?
