Fantz history - family versions handed down

In Fantz geneology, researchers vary at Michael S. Fantz (Fanz). Many sites note origin as German with parentage back to Theobald Fanz, discrepancies with LDS records, number of children and dates, twins or same person, first name of wife, German occupation as farmer or innkeeper, etc.
Later descendants are noted as adopting a "u" in their name as Fauntz, yet there is no "u" in the Theobald line history.
Family history told me from my grandmother and from two other branches obtained do not agree with the Theobald German line. They do include an "u" in the name previously to Michael & an explanation for its being dropped. Were later descendants replaing the "u" in their famil name?
I am wondering if early geneological researchers confused Michael S. Fanz with Michael S. (Solomon) Fantz, treating them as one individual, thus confusing data such as children, etc.
Would appreciate learning of family origins passed down through families to help put early pre-American history together. Willing to share other data on family members.
