Diebolds in Caroga? & Catholic churches in this area

I am looking for any information on any Catholic churches which may have existed from around 1854 through 1865 in or near Caroga, Fulton Co., New York, and where records for churches may be located.

I am trying to find a marriage record for my ancestors John Diebold and Adelheid Grass around 1854-1855, and birth or baptismal records for their first several children, who were born in New York before the family moved to Wisconsin. Those children may include:
Peter Diebold b. 16 May 1856, Lawrence Diebold b. Sept 1858, Mary Diebold b. 8 Oct 1859, John Diebold b. 13 Sept 1862, and Rose Diebold b. 3 May 1864

The family may also have had ties with Utica and Lake Erie, but it is uncertain at this time. They were Germany immigrants. I have found them in the 1860 census living in Caroga, but am uncertain where they lived in 1855. They were in Madison, Wisconsin by 1865.

Any help locating information on the churches or general information on the family would be greatly appreciated, as I have no experience researching in New York.
