It is all in pronouncation. The English Y is a J sound in Polish, Slovak, Ukrainian.
The Z'YDEK would be sort of like ZHYDEK. I bet that JYDEK when pronounced by an English speaking person a Slavic speaking person would write it as Z'YDEK/Z'IDEK.
