You do have a huge imagination.
There are numerous names like: Kolliakoudakis, Kollidakis, Kalliopoulos, Kollios, Kollias, Kollis, Kolliatzos, etc.
Most likely named after a FISH, called "KOLLIOS", a fish the Greeks traditionally eat the Sunday before the Easter Sunday. Kollias is a very understandable variation taking into account that "Kollios" is very close to a dirty word. (although I have noticed the surname of the wife of an American Greek Orthodox Priest is "KOLLOS" (no offence).
Yes, the Byzantine Empire in Peloponnese with its capital Mistra employed fortun soldiers from Albania, there were no Albanian tribes in Peloponnese and the soldiers did settle later in various islands.
Kalantzis (Kalaitzis) is a profession (A person who "glues" broken metal pieces together using "Kalai" ("Kalai" is used in electronics today, I think it is called "Soldering")
There are numerous professionally written, factual, historical books to read about the Mistra Emrpire and it's fall after the fall of Constantinople around 1453.

PS: Greeks NEVER called themselves ROMANS. You mean "ROMAIOS = ROMIOS"
