Additives to German Surnames

Surnames: Orthaus ,Herker,Herkerorthaus
In looking at records from the 1600's to 1700's for my ancestors in Westfalen, Germany, I am finding that some of their surnames have additional names added to them. The ones I'm seeing most often are ter, ten, herker and lutke.

Can someone help me clarify what these names mean? Why were they used? Are they considered part of their surname during that time?

When recording my ancestor's surname should I use the additive or drop it? For example: Should Joan Herman Orthaus be recorded as Joan Herman (Herker) Orthaus or Joan Herman Herkerorthaus or just ignored?

Any help is appreciated.
